From smallholder farms around Medellín in Antioquia, grown between 1,300 and 1,500 meters in volcanic loam. Fully washed and dried in solar dryers rather than open air — a detail that matters in a region where an afternoon rain can undo a week of work.

The Colombian everyone pictures when they say Colombian, done properly.
